1 LB Pecans

            1 Egg White

            ½ Cup Sugar

            ½ Cup Brown Sugar

           1 TBSP Cinnamon



  1. Whisk Egg White in bowl until frothy.
  2. Stir in Sugars and Cinnamon
  3. Toss in Pecans until well coated.
  4. Spread on Parchment paper lined cookie sheet
  5. Smoke with Hickory at 225 stirring every 10 minutes until mixture is dry.



  1. Best served warm.
  2. Can also be used for other types of nuts.
  3. Just like at the Carnival
